Warm Up with This Cozy Rotisserie Chicken Soup

Happy New Year (a few days late...no, wait, a couple of weeks late)! I've been distracted.

We’ve been dealing with some home repairs which means lots of soup for dinner. When I’m cold or don’t feel like cooking much, soup is always my go-to.

This Leftover Rotisserie Chicken Soup isn’t just a recipe—it’s a way to nourish your body and soul while using what you already have.

Why This Recipe is a Game-Changer:

  • Leftover Turkey? Toss it in for a delicious variation.
  • Tired of Soup? Use a pie crust to turn it into chicken pot pie with a slightly thicker soup base.
  • Sad Produce? Dry carrots or limp veggies are perfect here.
  • Half-Used Bags of Freezer Veggies? Save time and reduce waste by adding them.
  • No Cream? Use evaporated milk, but avoid boiling to prevent curdling

Serving Suggestions:

  • Pair with cornbread, biscuits, or crackers for extra satisfaction.
  • Place noodles, mashed potatoes, or mashed cauliflower in your bowl before ladling the soup on top.
  • For a rustic twist, serve over toasted sourdough bread on a plate

This was so good! I added 4 large cloves of garlic (minced). I also added some radishes while it was simmering so I could have “potatoes” in there. Thank you for sharing! KARMEN

Warmly,

Paula

buttermilk loaf with a flyaway top

Hi Friends, As promised, this is the follow-up to the email I sent a couple of weeks ago. Previously, we talked about why a loaf of bread collapses inward on the sides after it’s baked and removed from the pan. You can read it here. Today, I’m exploring why the top of a home-baked loaf of bread lifts off—sometimes evenly, but more often just on one side, and sometimes quite dramatically. 1. The crust set too early. If the outside firms up before the inside finishes expanding, trapped steam and...

loaf caving in on the right side

Hi Friends, I hope you had a wonderful holiday season and are ready to get serious about baking fantastic bread. Quick clarification before we dive into this tricky topic:I’m not talking about loaves that sink on top—that’s usually overproofing. Check out the right side where the loaf is starting to cave in. I’m talking about loaves that look fine out of the oven, then cave inward on the side as they cool. That kind of collapse almost always points to a structure problem, not fermentation....
