What I Cook When I'd Rather Play Mahjong

My creativity in the kitchen has gone into hiding during the high temperatures of the past few weeks.

I’m hoping it comes back soon. Does that ever happen to you when it’s time to cook dinner?

True confession: I’ve also been distracted by Mahjong this summer. My husband, children, grandchildren, and I have all learned to play, and we’re having a wonderful time with it. I’ve made new friends and gotten to know my neighbors better.

I may be addicted. Do you play? (If you do, and you live in my neighborhood, please let me know ASAP.)

Mahjong takes time, so lately I’ve been relying on old favorites I can make almost without thinking. Here are four recipes I know especially well because they are simple, dependable, and frequently requested at my house.

Perfect Bread Machine Pizza Dough Every Time

This bread machine pizza dough makes two 13-inch pizzas with a crisp, chewy crust. The dough is ready to shape as soon as the DOUGH cycle ends—no overnight rest or refrigeration required.

Yes, I make this one from memory. I’ve been making it for nearly 40 years.

Yogurt, Cucumber, and Dill Sauce for Salmon

This cool, no-cook sauce combines Greek yogurt, mayonnaise, cucumber, and dill. Spoon it over salmon or another simply prepared fish for an easy summer dinner.

Crispy Baked Chicken Flautas with Spinach (No Frying)

These crispy baked flautas use rotisserie chicken and spinach for a quick filling. They require no frying and are ready in about 30 minutes.

Coffee Ice Cream with Instant Espresso (Ice Cream Maker)

This coffee ice cream uses instant espresso powder and a no-cook base made with pasteurized eggs, so it comes together quickly in nearly any ice cream maker—including a small Donvier.

And unlike dinner, nobody complains when ice cream is the only thing I feel inspired to make.

So glad you're here,

Sliced white bread in a basket with butter on the side

WELCOME BREAD MACHINES YOGURT SALAD IN A JAR RECIPE INDEX It's hard to get in the mood to bake bread when the temperatures climb. On the other hand, if you're lucky enough to have fresh tomatoes, homemade bread takes a BLT to another level. So I keep baking—usually by turning the oven on early in the morning. While testing a new-to-me recipe yesterday, I ran into something I don't think I've ever talked about. The recipe was written in metric measurements (thankfully), but it also listed tiny...

straining yogurt with a handkerchief

WELCOME BREAD MACHINES YOGURT SALAD IN A JAR RECIPE INDEX A reader emailed me this week to say she strains yogurt with men's handkerchiefs. Not cheesecloth. Not coffee filters. Handkerchiefs. I've heard plenty of creative yogurt-making ideas over the years, but this was a new one. I have questions, of course. How much yogurt does she strain at one time? How large is her strainer? Is washing and drying the handkerchiefs significantly easier than using cheesecloth? Apparently, it works well for...

baked beans with sausage and hamburger in a black skillet with a wooden spoon

WELCOME BREAD MACHINES YOGURT SALAD IN A JAR RECIPE INDEX One thing I've learned about holiday meals is that people remember the favorites. You can add something new every year, but don't be surprised if someone asks, "Did you make the baked beans?" or "Where are the deviled eggs?" If you're planning a Fourth of July cookout, here are a couple of family traditions along with two more recipes that are always welcome at a summer gathering. Deviled Eggs Without Mustard (Sweet & Simple!) These...
