Let's Talk Thanksgiving Rolls

Are you thinking about your Thanksgiving meal yet?

My daughter-in-law has already sent the whole family beautiful invitations to Thanksgiving at her house. Wow! That is the definition of planning ahead. I love her for that...and also for hosting this year. 🤗

A question I hear often before Thanksgiving: Can I substitute all-purpose flour for bread flour and vice versa when making bread?

  1. Consider the texture you are going for in the final product. Bread flour makes a chewier texture. All-purpose flour can give rolls a softer, more tender texture
  2. Are you using any whole grains in the recipe? Bread flour is stronger than AP flour and will help support the whole grain flour to produce a higher rise.
  3. Bread flour is thirstier than all-purpose flour. If you use all-purpose flour in a recipe calling for bread flour, you may need to reduce the liquid or add more flour. Observe the dough as it kneads to determine whether it needs mor flour or liquid.

If you can't decide, use an all-purpose flour with higher protein content, such as the organic all-purpose flour sold at Costco or the all-purpose flour in the blue bag at Trader Joe's.

One more note: I never use bleached flour because I think I can taste it. Just my opinion.

Here's a sampling of dinner rolls to inspire you, starting with the simplest.
